Baked Cinnamon Sweet Potatoes Recipe

Step 1: Cutting Your Sweet Potatoes

1. Thoroughly wash and rinse your sweet potatoes. If you’re planning on eating them with the skin on, you’ll want to give them a good scrub under some hot water.
2. Cut the ends off your sweet potatoes.
3. Cut your sweet potatoes into 1 inch thick slices and put them aside.

Step 2: Preparing Your Baking Tray

1. Line your baking tray with a sheet of aluminium foil.
2. Coat the sheet of aluminium foil with a light layer of olive oil or coconut oil spray.
3. Dust the sheet of aluminium foil with a generous amount of cinnamon powder, ensuring the entire sheet is covered with cinnamon powder.

4. Place your sweet potato slices face down on top of the sheet of aluminium foil.
5. Coat the top of the sweet potato slices with a light layer of olive oil or coconut oil spray.
6. Dust the top of the sweet potato slices with a generous amount of cinnamon powder, ensuring all of the sweet potato slices are covered with cinnamon powder.
7.Cover your baking tray with multiple sheets of aluminium foil, ensuring that there is a good seal between the aluminium foil and the baking tray with no spaces for heat to escape.

Step 3: Cooking Your Sweet Potatoes

1. Pre-heat your oven to 220°C/430°F.
2. Once the oven has been pre-heated (not before), place the baking tray in the oven and bake for 1 hour.
3. After 1 hour, remove the baking tray from the oven and, very carefully, peel away some of the aluminium foil to allow the excess heat and steam to escape.
4. Allow your sweet potatoes to rest for 30 minutes with the top layer of aluminium foil completely removed.
5. Your sweet potatoes are now ready to be served or stored in the fridge for later use with the skin on or off! So go get yourself some GAINS!
